Die verschiedenen Rebsorten wurden separat in kleinen Stahltanks vergoren, um ihre sortentypischen Eigenschaften zu erhalten. Nach der alkoholischen Gärung erfolgte die malolaktische Gärung, wiederum in Stahltanks. Zu guter Letzt wurde der Wein 10 Monate lang teils in Barriques, die für Ornellaia verwendet wurden, und teils in Zementtanks, ausgebaut, um eine perfekte Ausgewogenheit zwischen der Tanninstruktur und Ausdruck der Frucht zu erzielen.

Le Volte dell’ Ornellaia 2020 leuchtet in Rubinrot mit Purpur-Reflexen und wird in der Nase von weinigen Aromen geprägt: er entfaltet ein komplexes Duftprofil, das Beerenfrüchte, mediterrane Macchia und feine Tabak- und Gewürznoten umfasst. Sein weiches und seidiges Mundgefühl wird gleichzeitig von einem lebhaften Säurespiel unterstützt, das uns einen knackigen, langen Abgang beschert. - Olga Fusari – Weinmacher – Dezember 2021
