Acetaia Alico Estensis is based in Sorbara, near Modena. There, high-quality balsamic vinegars are produced in small quantities away from any industrial production. For example, no additives such as caramel color (E150 = caramel coloring) are used.
The balsamic vinegars from the Estense series, of which there are different price levels - depending on the maturation time of the vinegar - are particularly rich in aroma. The Lodovico Aceto Balsamico matures in oak barrels for a long time, the exact process is a closely guarded family recipe.
With its viscous consistency, it can be used sparingly, its strong aroma of ripe fruit with a spicy, sweet and sour note enriches every carpaccio. As a balsamic spice, the Aceto Balsamico di Modena Lodovico goes well with many sophisticated Mediterranean salads and platters, and with fresh strawberries it is a special kind of taste experience.
